Date night cooking can be daunting. The pressure of showing off your ‘wifey’ skills for that special person you want to impress and not killing them in the process is a battle on its own. But help is on hand with this simple yet scrumptious three course meal.
Tomato Bruschetta
This is the easiest and yummy classic Italian starter. Ideal for a romantic night in, this quick dish is fresh, tasty and full of flavour.
1. In a large bowl, mix the onions, tomatoes, garlic and basil, taking care not to mash or break up the tomatoes too much.
2. Add the balsamic vinegar and extra virgin olive oil. Add salt and pepper to taste. Mix again.
3. Cover and chill for at least an hour. This will allow the flavours to soak and blend together.
4. Slice the baguette loaf diagonally into 12 thick slices and lightly toast them until they are light brown on both sides. Serve the mixture on the warm slices of bread. If you prefer the mixture at room temperature, remove from the fridge half an hour before serving.
Main Meal; Linguine with Shrimp and Lemon Oil
This pasta recipe might be simple, but who can say no to garlic sautéed shrimp served over a bed of linguine and drizzled with an easy lemon oil sauce? Not your date, that’s for certain.
For the lemon oil
1. Combine the olive oil and the lemon zest in a small bowl and reserve.
For the pasta
1. Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until tender but still firm to the bite, stirring occasionally, about 8 to 10 minutes. Drain pasta, reserving 1 cup of the cooking liquid.
2. Meanwhile, in a large, heavy skillet warm the olive oil over medium heat. Add the shallots and garlic and cook for 2 minutes. Add the shrimp and cook until pink, about 3 minutes. Add the cooked linguine, lemon juice, lemon zest, salt, and pepper. Toss to combine. Turn off the heat and add the arugula. Add the chopped parsley to the pasta and toss to combine. Serve immediately and watch your man be satisfied
